Crock Pot Beef Ragu

A classic and comforting Italian favorite! The red wine adds a richness that soothes the soul.

Ingredients

  • 1 1/2 lbs chuck roast

  • 1 stalk celery; diced

  • 2 carrots; diced

  • 1 yellow onion; diced

  • 3 cloves garlic; minced

  • 1 tsp fresh thyme

  • 3 Tbsp tomato paste

  • 1 bay leaf

  • 1 cup dry red wine (pinot noir works delightful!)

  • 28oz can diced tomatoes

  • 16oz wide noodles

  • 1 Tbsp olive oil

  • Salt & Pepper to taste

Directions

  • Season beef with salt & pepper. Add 1 Tbsp olive oil to pan and sear all sides of roast; remove and set aside
  • To the same skillet, add in the onion, carrots, and celery sautéing for 4-6 minutes or until veggies are tender. Add the garlic and sauté another 30 seconds.
  • Stir in the fresh thyme, tomato paste, and bay leaf. Cook for 1 minute
  • Stir in the red wine and cook until reduced by half; about 5 minutes
  • Stir in diced tomatoes and cook another minute or two.
  • To your slow cooker, add your beef and sauce. Cook on low for 6 hours
  • Once time is almost up, prepare your pasta. Shred the beef and remove the bay leaf. Serve over pasta and top with parsley. Enjoy!
