Crock Pot Butternut Squash Soup

A deliciously creamy butternut squash soup to warm you up from the inside out!

Ingredients

  • 2lb butternut squash; peeled and chopped

  • 1 yellow onion; roughly chopped

  • 1/2 tsp ground ginger

  • 1/2 tsp cumin

  • 1/2 tsp coriander

  • 1/2 tsp paprika

  • pinch cayenne pepper

  • 1 1/2 tsp salt

  • 1/4 tsp black pepper

  • 4 cups vegetable broth

  • 1/4 cup coconut milk (or more if you like more sweetness!)

  • Optional Toppings
  • Pumpkin Seeds

  • Cilantro

  • More coconut milk

Directions

  • To your slow cooker add your squash, onion, ALL the seasonings, vegetable broth, and coconut milk; stir to combine
  • Cook on high for 4 hours or low for 6 hours
  • Once time is up, If you have an immersion blender, blend the soup until smooth. If you only have a blender, fill blender only half way and blend in batches.
  • Top with your favorite toppings and enjoy!
