Crock Pot Honey Garlic Chicken




Truly a dump and go meal! Deliciously sweet and savory!


  • 6 chicken thighs

  • 1 onion; sliced

  • 1 lb baby red potatoes

  • For the Sauce
  • 3 cloves garlic; minced

  • 1 Tbsp dijon mustard

  • 1 Tbsp brown sugar

  • 2 Tbsp lemon juice

  • 3 Tbsp soy sauce

  • 1/3 cup sweet Thai chili sauce

  • 1/2 cup honey


  • Mix together all ingredients to make the sauce; whisk together well
  • Add chicken thighs to slow cooker along with the onion and potatoes. Top with the sauce and mix well
  • Cook on high for 4 hours or low for 8 hours
  • Serve and enjoy!
  • Optional Steps:
  • Once chicken is done, carefully remove to a sheet pan and broil on high for 5 minutes.
  • If you’d like a thicker sauce, remove sauce to a saucepan and bring to a boil. In a small bowl mix together 1 Tbsp corn starch and 2 Tbsp water. Add slurry into sauce and it should thicken within a few seconds.
