  • 3/4 pound deli roast beef; diced

  • 1 medium yellow onion; sliced

  • 1 large green bell pepper; sliced

  • 12 oz fresh mushrooms; sliced

  • 1 Tbsp cooking oil

  • 1 tsp garlic powder

  • 1 tsp ground mustard

  • 1 Tbsp Worcestershire sauce

  • 3 Tbsp butter

  • 1/4 cup flour

  • 1 cup milk

  • 4 oz Velveeta cheese

  • 16oz cooked short pasta

  • Salt & pepper to taste

  • Boil 6 cups of water and cook pasta according to package. Save some pasta water for the sauce.
  • Add oil to a heavy pan over medium heat and saute the sliced vegetables with a pinch of salt and pepper for about 5-7 minutes or until tender
  • Stir in the garlic powder, ground mustard, and Worcestershire sauce
  • Next, stir in the butter; melt, then stir in flour. Be sure to cook until there are no more white spots to ensure flour is cooked through.
  • Gradually stir the milk into the mixture whisking as you go to avoid clumping. Cook about 3 minutes until thickened
  • Add the Velvet cheese and cook another 2-3 minutes until everything is well combined
  • Finally, mix in the pasta. Add pasta water if sauce is too thick. The starchy water gives the pasta dish wonderful flavor and a silky sauce. Enjoy!
